        I’m not sure how to accurately put in to words the incredible evening we experienced at the Grand Palladium Vallarta Resort & Spa on March 13, 2019. Originally, we were to have my cousin Paul Frisk and his better half Valerie Kettle join us at our resort, but then they received an offer none of us could refuse. Paul and Val have been coming to the Grand Palladium Vallarta Resort & Spa for over adecade (usually twice a year), and to show their appreciation the General Manager Jose Morgan extended an offer for Paul and Val to have all of us out to their resort for dinner (12 of us). This was a gift from the resort at no expense to Paul, Val or the rest of us. All we had to do was make our way out to the resort that day.

        If all the night entailed was gathering together for dinner it would have been a great evening. Jose Morgan and the staff had other plans, however. Upon our arrival we were greeted by Paul and Val, their friends Tim and Michelle, Jose and other staff members and were instantly made to feel like we were at home. After a few minutes to get signed in and drinks in our hands, we headed out for a quick tour of the resort. We have seen the pictures and videos Paul and Val have posted from their visits to the Grand Palladium Vallarta Resort & Spa over the years, so it was nice to finally meet some of the people and take in the resort firsthand. After the tour we headed to the location for our dinner. Dinner was on what is called the “Family Selection Deck”. This is basically a large open deck overlooking the water with a stunning view. There was just one table on the deck set for our large group, making for a nice intimate setting. Our dinner was three courses, starting with an amazing Caesar salad with shrimp. The main course was Salmon with a perfect poblano sauce and accompaniments. To finish it off was a nice light tiramisu. Throughout the dinner we were serenaded by the lovely Grecia, with a wonderful selection of music. At the end of the evening we were surprised by a beautiful firework display right off the beach in front of us! To say that Jose and the entire staff made us feel special is an understatement. After the fireworks we enjoyed a wonderful show in the central entertainment area and then needed to head back to our resort.

        I would like to take this opportunity to thank Paul and Val for inviting us to the Grand Palladium Vallarta Resort & Spa, to Jose Morgan for extending the offer and making it happen, and to the entire staff for treating us incredibly and making us feel welcome. Our next trip to Mexico will be to stay at the Grand Palladium Vallarta Resort & Spa. It is the only way we can think of to properly say thank you for the hospitality we were shown. We can’t wait to experience it for more than one night. On behalf of my entire family, Gracias!
